Where to Eat in Cappadocia: Local Dishes and Göreme Stops

A grounded food guide to Nevşehir testi kebabı, regional home-style dishes, Cappadocian wines and current Göreme restaurants, with practical notes for planning meals around the region’s spread-out sights.

Travel guide

Meat and vegetables in an opened terracotta cooking pot

Cappadocia’s food scene reflects the wider Nevşehir region, while its most visited towns—Göreme, Uçhisar, Avanos and Ürgüp—are spread across a broad landscape. Try a signature clay-pot meal if it appeals, but leave room for everyday local dishes, breads, vegetables, sweets and regional wine. The official tourism routes group Uçhisar, Göreme, Paşabağ, Zelve, Avanos and Ürgüp on one sightseeing circuit, while the underground cities and Ihlara Valley form a separate southern outing. Treat meal stops as part of those geographic choices rather than expecting to cross the region quickly between lunch and dinner.

Regional dishes worth recognizing

Nevşehir testi kebabı is meat, vegetables and seasoning cooked together in a sealed pottery vessel, traditionally made in Avanos and baked for about two to two and a half hours. It is often served by breaking the pot open. The protected regional description identifies beef or lamb, but restaurant versions vary; ask what is in the pot, how long the order takes, whether it serves one or more people and whether it needs advance ordering. A vegetarian clay-pot dish is a separate menu item, not an automatic substitute. Türkiye Ministry of Culture: Nevşehir testi kebabı.

Soğanlama is a home-style preparation of onion, egg, pepper and tomato. Ağpakla combines white beans, butter and meat; gendime uses chickpeas, wheat and meat; and dıvıl combines potato and cracked wheat. These foods are documented by GoTürkiye as local Nevşehir dishes, but they may be less common on the tourist-facing menus in Göreme than kebab, pide and grilled food. If you see them, ask how the kitchen prepares that day’s version. GoTürkiye: Nevşehir regional food.

For a sweet finish, look for pumpkin dessert, köftür (a grape-juice confection), dolaz (a flour halva) or grape molasses. GoTürkiye also describes kayısı yahnisi, a meat-and-apricot stew, and kuru kaymak, dried clotted cream commonly served with honey. These are regional leads, not promises that every café carries them; check the current menu. Cappadocia has a documented wine culture too. Emir is a local white grape, and regional producers also work with varieties such as Öküzgözü and Kalecik Karası. Ask a winery or restaurant what local bottle is currently available instead of assuming a particular grape will be poured by the glass. GoTürkiye: Cappadocia food and wine.

Göreme: local cooking and broad menus

Seten Restaurant — Aydınlı Mahallesi, Çakmaklı Sokak No. 35, Göreme. Its current menu describes local appetizers, soups, main courses and desserts. The operator specifically lists grape leaves, stuffed pumpkin blossoms, flatbread, soups and baked okra among items prepared by local women, with grilled dishes offered in the evening. The restaurant says it takes walk-ins rather than reservations and recommends arriving before sunset; confirm the current arrangement before making it part of a tight itinerary. The address is uphill within Göreme, so use the street search and check the walk from your accommodation. Seten’s current menu · operator address and visit information · map search.

Garden Lounge — Turgut Özal Meydanı No. 4, Göreme. Its current menu lists lamb testi kebab, Turkish breakfast, beef külbastı and other Turkish and international dishes. It is described as being in Göreme’s center with an open-air garden. This gives travelers a central option when they want to compare several styles rather than seek out one narrowly regional dish. Its online menu and reservation page are operator sources; check the live menu, opening details and availability directly. Garden Lounge menu and contact · map search.

Gurme Kebab — Müze Caddesi No. 38, Göreme. The restaurant’s own menu currently lists meat and chicken testi kebabı, a vegetarian testi, vegetarian pide and kiremit dishes, meze, grills, soups and Kayseri mantısı. Kayseri mantısı is a Turkish dumpling dish, but it should not be presented as a specifically Cappadocian specialty. This broad menu can help groups with different preferences; the named vegetarian options still need direct questions about ingredients, stock, dairy and cross-contact. Its site says hours can change, so check the current listing before going. Gurme Kebab menu, address and current hours · map search.

Avanos and Ürgüp: make a separate meal stop

Avanos is a useful choice on the northern sightseeing corridor through Paşabağ and Zelve. It is associated with pottery, including the locally registered vessels used for Nevşehir testi kebabı. Do not add Avanos as a quick detour to a day already centered on the southern underground cities. Ürgüp fits the official Ürgüp–Soğanlı route and is a separate town from Göreme; check restaurant details and return transport before booking an evening meal there. The regional route groupings are shown on GoTürkiye’s Cappadocia route guide.

Build meals around a realistic day

One day: If your sightseeing is concentrated around Göreme, keep breakfast and dinner close to your base. Try one regional dish at lunch or dinner and reserve the other meal for flexible meze, soup, pide or a menu item that suits your group. Avoid planning a long southern excursion and a far-flung restaurant reservation on the same day.

Two days: Spend one day on the official Uçhisar–Göreme–Paşabağ/Zelve–Avanos–Ürgüp corridor, choosing only the stops that fit your pace. Have the main meal in the town where you finish rather than relying on a cross-region transfer after dinner. Use the second day for either the Göreme–Ihlara / underground-city direction or a slower valley and village day; the official tourism routes treat these as distinct outings. Check road transport and opening times for the actual date.

Three days: Add a second corridor instead of compressing all landmarks into one loop. A practical outline is a Göreme-area day, a northern route day with Avanos and a meal nearby, and a southern excursion toward Kaymaklı, Derinkuyu or Ihlara. For the latter, carry water and arrange return transport in advance. Choose a special dinner in Göreme or Ürgüp on a night when you are already nearby. A tasting-room or winery visit should be booked and routed separately; do not assume tastings, transport or hours without checking with the operator.

Dietary and booking checks

Testi kebabı is a meat dish in its regional form, and local bean or wheat dishes may also include meat or butter. “Vegetarian” menu sections do not establish vegan ingredients or allergy safety. Confirm broth, butter, yogurt, wheat, nuts and preparation surfaces with the restaurant. Ask whether a pot is cooked to order and how many diners it serves. Menus, prices, hours, seasonal items and booking policies change; use the operator’s current page and contact the venue close to travel.
